By and large, the local fare isn’t all that inspiring but, credit where it’s due, the Dutch serve up a decent range of hearty winter fare and no dish sums that up more than stamppot. Fortuntely, it’s super quick and easy to cook, there are various versions – so you can personalize it as much as you like – and it’s easy to make a healthier no sugar no grain version.
So, for two people.
- Peel and chop 2 x sweet potatoes and boil.
- Peel and halve 250g of sprouts. Once the sweet potato has been boiling for 10m, throw the sprouts in with it.
- Chuck 1 or 2 x sausages per person (depending on the size… of the sausages and the people!) either into the oven, or cook on heat in a casserole pot.
- After the sprouts have been in with the sweet potatoes for 5-10 minutes they should both be nice and soft. Drain the water, throw in some butter, cream or coconut milk, season with sea salt and cracked black pepper, and mash together either using a potato masher or a stick blender.
- You can cheat and make your own gravy, or throw some wine, stock (or pre-prepared bone broth), herbs and butter in with the sausage to create your gravy.
- Chuck on the plate and serve with mustard!
Easy dinner, great for cold winter nights, and you can substitute the sprouts with cabbage, kale, carrots, etc… If you want even less carbs in there, make your mash from cauliflower rather than sweet potato. For an active athlete who trains in the evening, however, a little sweet potato mash is no bad thing at all.
