Fresh, easy, quick and tasty. The problem, of course, occurs when you add the taco shells, fajita wraps and nacho chips that often accompany the dishes. Fortunately, there are no sugar no grain options, such as 'oopsie rolls'.
Chop courgettes, peppers, red onion and throw them into a hot pan with a generous teaspoon of coconut oil. After a few minutes, throw in chopped mushrooms, tomatoes and peeled shrimp. Keep it all moving until the shrimp starts to color and then throw in the spices. You can make your own spice mix with: dried chili, coriander seeds, salt, paprika, cayenne pepper and crushed garlic (or garlic powder). The throw in a handful of finely chopped coriander and squeeze in a lime. Boom - easy!
Guacamole:
Put 2 cloves of garlic, half a red onion, an avocado, salt, pepper, a bunch of coriander and a good squeeze of lime juice into a blender. Blend until it's the consistency you desire.
Salsa:
Put 2 cloves of garlic, the other half of the red onion, a big juicy tomato and a few sun-dried tomatoes and a teaspoon of balsamic vinegar into a blender and blend away.
The oopsie roll 'fajitas':
- Take 3 eggs and separate the eggs from the whites.
- Whip the whites till meriguey and peaks form in the mixture.
- Take the yolks and add an equal volume of cream cheese. Add one teaspoon of almond flour, one teaspoon of coconut flour and whisk the whole mixture.
- Once whisked, slowly fold the yolk mix into the foamy whites.
- Spread the mixture out on baking paper in the shape desired and bake for 25 minutes at around 150C. Voila - low carb fajitas! Add some cheese or creme fraiche, pile a bunch of everything on to the oopsie roll and get stuck in!
