- Start with one plump organic, free range chicken breast and slice along the length so that the breast is open on just one side.
- Layer a few slices of a nice hard cheese like Gouda in there - hard cheeses work best here as, if you use softer cheeses, they often simply pour out of the chicken while cooking.
- Wrap the breasts in slices of prosciutto/Parma ham and secure using either string or cocktail sticks
- Place in an oven dish and cook at 200C for 15-20mins
- Pour a drop of white wine, a chunk of butter, some lemon juice and a little cream into the oven dish and place back in the oven for 5 minutes
- Remove the chicken breasts, allow them to rest for a couple of minutes before serving, and remove and string/cocktail sticks. Stir the remaining liquid around the oven dish to create a lovely creamy sauce (and up the healthy, satiating fat content of this dish).
- Serve as desired - in the picture, I steamed up some romanesco (alien broccoli) and carrots.
- Quick, simple, tasty, low carb, high fat... good times.
More a serving suggestion than a recipe here as there is little in the way of instructions here. Just a reminder that low carb cooking can be simple and tasty, all at the same time.
