- Fry up 1-2 finely chopped onions in coconut oil until they start to brown
- Throw in around 500g (to feed 4 hungry triathletes) of mince (beef mince is best)
- Add chopped mushrooms, carrots and continue to fry
- Once the beef has browned a little, add 2 tablespoons of tomato puree, 1 tbspn mustard, a touch of Worcester sauce and sprinkle some gravy granules in there
- Finally, half cup of water. Cook out for a few minutes and then pour into a casserole dish.
- Sprouts (halved) and cubed courgettes - partially steam until about 70% cooked through
- Spread out across the top of the mince mix
Top layer:
- Basically, this is made from cauliflower mash
- Boil one large cauliflower until cooked through. Then drain and fully blend (stick blender works best) with a spot of cream and a good slice of butter
- Add a big tablespoon of coconut flour and almond flour, as well as an egg to the cauliflower mix for the right texture. This makes it taste like real mashed potatoes!
- Build it up into a top layer and then place the whole dish in the oven (170C) and cook for 15-20 mins. The peaks of the cauli mash should be just starting to brown and burn.
Serve with red cabbage (steamed, then served with a touch of balsamic and seasoning!). Proper tasty. Especially with some nice mustard.
